This Imperial Stout presents a decadent sensory profile shaped by fifteen months of maturation in Madeira barrels. An intricate base of eight different malts creates a foundation of bittersweet chocolate, espresso, and charred grain, while the addition of muscovado sugar imparts a deep, molasses-like richness. The barrel aging introduces distinctive vinous notes of toasted nuts, caramel, and dried dark fruits like raisins and figs. On the palate, the intense roast is balanced by a velvety sweetness and a lingering, warming finish characteristic of its high gravity. It is a complex, harmonious expression of dark grain and fortified wine influence.
Appearance. Jet black (40+ SRM) and completely opaque. A persistent, deep tan head provides moderate lacing. The high viscosity and alcohol content are evidenced by distinct legs clinging to the glass.
Aroma. High intensity aroma featuring a rich blend of roasted coffee, dark chocolate, and black licorice. The Madeira barrels contribute a prominent vinous character with notes of prunes, toasted walnuts, and oxidized caramel. Muscovado sugar adds a layer of dark molasses sweetness, complemented by low earthy hop notes and a clean, noticeable alcohol presence.
Taste. Initial impression is of intense roasted malt, shifting into flavors of bittersweet cocoa and burnt grain. A complex dark fruit profile of black currants and dried figs emerges mid-palate, intertwined with the woody, nutty influence of the Madeira barrels. The muscovado sugar provides a robust body and sweetness that balances the aggressively high bitterness. The finish is long and warming with a lingering bittersweet roast character.
Mouthfeel. Full to very full-bodied with a luscious, velvety, and chewy texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present, reflecting the 12.3% ABV without being sharp or solventy. No astringency.
