Viva Trigo presents a rustic, unfiltered interpretation of a Weissbier, characterized by its distinctive light brown hue and pronounced turbidity. The sensory profile is headlined by classic German weizen yeast expressions, delivering bold aromas of ripe banana and spicy clove. These yeast-driven traits are harmoniously supported by a bready backbone of malted wheat and subtle notes of toasted malt, which add a unique depth to the traditional style. On the palate, it provides a sense of fullness and plenitude, balancing soft grainy sweetness against a very low bitterness. This effervescent ale remains crisp, finishing with a lingering, wholesome yeast character.
Appearance.Light brown to deep amber (8–12 SRM); highly turbid and opaque with visible yeast sediment; thick, moussy, long-lasting off-white head with excellent lacing.
Aroma.Moderate to high intensity; prominent banana esters and spicy clove phenols; bready, doughy wheat character with a secondary toasted malt aroma; very low spicy hop presence.
Taste.Initial impression of bready wheat and soft, toasted grain; low bitterness (approx. 10–15 IBU) allows the yeast-driven banana and clove flavors to lead; well-rounded fermentation profile; finishes relatively dry and clean with a lingering bready aftertaste.
Mouthfeel.Medium body with a fluffy, creamy fullness; high carbonation providing a spritzy, effervescent sensation; no perceptible alcohol warmth or astringency.
