This Metheglin captures the fiery spirit of rebellion through a potent infusion of hand-grated fresh ginger. The sensory profile opens with a pungent, zesty aroma of raw ginger root, layered over a delicate, floral honey base. On the palate, the natural sweetness of the honey provides a necessary counterpoint to the intense, spicy heat of the ginger, creating a balanced yet bold character reminiscent of traditional British winter meads. The finish is long and warming, dominated by the natural earthiness of the spice. It is a clean, gluten-free expression of ancient Celtic-inspired fermentation with a distinctively sharp edge.
Appearance. Pale gold to light amber (5-8 SRM). Brilliant clarity with no head retention or lacing, consistent with a still or lightly petillant mead.
Aroma. High intensity ginger aroma, characterized by fresh-cut root, spicy zest, and a touch of earthiness. Moderate honey character provides floral and slightly waxy notes. Clean fermentation profile with no hop aroma or significant esters.
Taste. Dominant ginger flavor providing a spicy, peppery bite and significant heat. Moderate honey sweetness balances the ginger spice. No hop bitterness or flavor. The fermentation is clean, allowing the botanical ingredients to remain at the forefront. Finish is lingering and warming with a persistent ginger aftertaste.
Mouthfeel. Medium body with a smooth, slightly syrupy texture. Carbonation is very low to still. Noticeable warmth is present, derived from both the 6% alcohol and the ginger's natural pungency. No astringency.
