Wide Open Space is an exceptionally refreshing Wild Specialty Beer that evokes a vibrant summer garden. Built on a soft, wheaty base that has been cleanly kettle soured, this beer features the addition of four hundred liters of fresh cucumber juice and cooling mint. The cucumber provides a crisp, dew-like brightness that mellows the lactic acidity into a gentle, approachable pucker. The mint further elevates the profile with a breezy, herbal freshness. This combination results in a bone-dry, effervescent, and highly moreish profile that prioritizes thirst-quenching drinkability and garden-fresh aromatics over aggressive sourness.

Appearance. Pale straw to light yellow (2-3 SRM). Displays a slight haze consistent with a wheat-heavy base. Pours with a moderate white head that has fair retention but eventually fades to a thin collar, leaving minimal lacing.

Aroma. Moderate to high intensity featuring prominent notes of freshly sliced cucumber and garden-fresh mint. A clean, sharp lactic tartness is evident, supported by a subtle background of bready, grainy wheat. Hop aroma and fermentation esters are absent, allowing the specialty ingredients to lead.

Taste. Initial impression is one of clean, refreshing tartness. The mid-palate is dominated by the cooling, vegetal flavor of cucumber juice, seamlessly integrated with a subtle minty lift. A low bready malt character provides a brief structural support before giving way to a very dry, crisp finish. Bitterness is negligible, and the aftertaste is a clean, lingering mix of cucumber skin and light acidity.

Mouthfeel. Light-bodied with a crisp, thin texture. Carbonation is high and effervescent, enhancing the refreshing quality. No alcohol warmth is perceived. Very low astringency, though the acidity provides a light, pleasant tingle on the tongue.
