This Imperial Stout presents an intricate tapestry of dark indulgence, melding the roasty intensity of its base with a unique fermentation profile. The use of Belgian yeast introduces a sophisticated layer of spicy phenols and dark fruit esters, diverging from traditional clean profiles. Cacao nibs infuse the palate with a rich, fudgy decadence that lingers into the finish. A year of maturation in Bourbon and Cognac barrels imparts nuanced notes of toasted oak, sweet vanilla, and a refined vinous depth. Appearance. Jet black and completely opaque. Pours with a thick, dense, dark tan head that shows moderate retention and leaves significant lacing on the glass. High viscosity is evident through visible legs when swirled.
Aroma. High intensity with a complex blend of bittersweet chocolate, espresso, and fudgy cacao nibs. The Belgian yeast contributes distinctive spicy esters and notes of dried plum and fig. Subtle toasted oak, vanilla, and a vinous, spirit-like warmth from the Bourbon and Cognac barrels emerge as the beer warms.
Taste. Rich and multi-layered, beginning with deep roasted grain and dark chocolate. The middle palate features fudgy cacao and spicy Belgian yeast character. Oak tannins and vanilla from the barrel aging provide balance to the sweet malt, while the Cognac adds a dried fruit complexity. Medium-high bitterness provides a firm backbone, leading to a long, warming finish of cocoa and charred wood.
Mouthfeel. Full-bodied and chewy with a luscious, velvety texture. Carbonation is low to moderate, enhancing the creaminess. A smooth, gentle alcohol warmth is present throughout, reflecting its strength without becoming sharp or solventy.
