Different Lights is a sophisticated Imperial Stout that presents a complex interplay of dark, roasted elements and vibrant fruit. The sensory journey begins with an intense chocolatey malt foundation, layered with the deep, fleshy sweetness of added Plum. This fruit character is sharpened by the cool, spicy flicker of Star Anise, which provides a bright counterpoint to the beer’s rich density. Over a year of aging in fresh Bourbon and Cognac barrels imparts nuanced notes of toasted oak, vanilla, and fine spirituous warmth. The result is a harmonious, velvety experience where the dark malt bitterness is perfectly balanced by the luscious fruit and refined barrel character.

Appearance. Jet black and completely opaque. Pours with a dense, deep tan head that shows moderate retention and leaves significant lacing. High viscosity is apparent in the glass with visible legs.

Aroma. Intense and multi-layered. Primary notes of bittersweet chocolate and roasted coffee are complemented by a prominent, fleshy plum fruitiness. Secondary notes of star anise provide a distinct licorice-like spice, while the long barrel aging contributes aromas of vanilla, charred oak, and a vinous, spirit-forward character from the bourbon and cognac.

Taste. Rich and complex; starts with a deep chocolate malt sweetness that quickly evolves into a medley of dark fruit and spice.
