Vibrant Forest Brewery’s Crosswinds is a sophisticated Baltic Porter, defined by a meticulous "low and slow" fermentation using the brewery's house lager yeast. This cold-conditioned process ensures a remarkably clean fermentation profile, allowing the complex architecture of seven distinct malts to shine through. The sensory experience is led by a robust, biscuity core, layered with deep nuances of dark chocolate, toffee, and toasted nuts. Subtle esters of prunes and raisins emerge mid-palate, characteristic of the style’s strength. While dark and imposing in character, it remains exceptionally smooth and approachable, finishing with a gentle, lingering roast and a deceptive, well-integrated warmth.
Appearance. Deep reddish-copper to opaque dark brown (SRM 25-30), though not quite black. It features a thick, persistent tan head with excellent lacing and remains clear despite its depth of color.
Aroma. High intensity of rich maltiness with prominent notes of deep toast, biscuit, and dark chocolate. A moderate ester profile provides a complex backdrop of raisins and dried cherries, balanced by a clean lager yeast character with no hop aroma.
Taste. Initial malt-driven sweetness gives way to a complex blend of biscuity malt, molasses, and dark fruit. A smooth, Schwarzbier-like roast emerges mid-palate, offering hints of licorice and coffee without any burnt harshness. The bitterness is medium-low, just enough to balance the rich malt, leading to a smooth, dryish finish with lingering dark fruit notes.
Mouthfeel. Medium-full to full-bodied with a smooth, velvety texture. Carbonation is moderate to medium-high, providing a mouth-filling sensation that prevents the beer from feeling heavy. A light, well-aged alcohol warmth is present but subtle.
