VERTERE Somnium
Belgian IPA 7 º
Somnium is a sophisticated Specialty IPA that bridges Belgian tradition with modern souring techniques. A luminous base of Pilsner malt, flaked oats, and wheat creates a silky, soft texture that supports a vibrant lactic acidity. The Citra Lupomax and Riwaka hops lead the charge with intense waves of orange zest and grapefruit, while Lorien adds a delicate floral lift. These bright notes dance alongside the spicy phenolics and stone fruit esters characteristic of the Belgian Ale Yeast. The result is a complex, refreshing interplay of sharp citrus, peppery spice, and a crisp, tart finish that highlights the masterful collaboration between VERTERE and Kyoto Brewing.
Appearance. Hazy, pale straw to deep gold (4–7 SRM). Large, frothy white head with excellent retention and significant lacing, often showing a persistent fine-bubble collar.
Aroma. High intensity with a complex blend of sharp lactic sourness and tropical hop character. Prominent notes of grapefruit and orange zest from Riwaka and Citra Lupomax are layered over Belgian-derived pear esters and a hint of clove-like spice. Low bready wheat and doughy malt presence.
Taste. A bright, tart initial impression of lemon and citrus peel. Hop flavors of passionfruit, lime, and floral Lorien are supported by a lean Pilsner malt backbone. The Belgian yeast contributes moderate peppery phenols and stone fruit. Bitterness is moderate to firm but integrates with the acidity for a sharp, refreshing profile. Finishes very dry and clean with lingering hop resin.
Mouthfeel. Medium-light body with a smooth, slightly creamy texture from the flaked oats and wheat. Carbonation is moderate-high to high, providing a prickly sensation that enhances the tartness. Very light alcohol warmth at 7% ABV.
