This Belgian Tripel presents a sophisticated sensory profile, blending monastic tradition with a distinctive rye twist. The aroma is dominated by spicy, peppery phenols and citrus esters, further enhanced by the herbal and earthy notes of East Kent Goldings hops. On the palate, a soft, grainy-sweet Pilsner malt base is quickly overtaken by the sharp, spicy character of rye, providing a complex backup to the yeast profile. Despite its 9% strength, the beer remains effervescent and deceptively drinkable, finishing remarkably dry with a firm, lingering bitterness. It is a harmonious marriage of traditional yeast esters and modern grain complexity.

Appearance. Deep gold to light amber (6 SRM) with brilliant clarity. Features a massive, rocky, snow-white head with excellent retention and intricate lacing.

Aroma. Moderate-high intensity. Prominent peppery and clove-like phenols from Belgian yeast are complemented by the spicy, earthy aroma of East Kent Goldings. Fruity esters suggest orange peel and lemon. Subtle grainy-sweet malt with a hint of spicy rye.

Taste. Initial soft malt sweetness gives way to a complex interaction of spicy rye and peppery yeast phenols. Low to moderate floral and earthy hop flavor from East Kent Goldings. Firm bitterness leads into a very dry, crisp finish with a lingering spicy-fruity aftertaste.

Mouthfeel. Medium body with a surprisingly light, effervescent texture due to high carbonation. Subtle, well-integrated alcohol warmth. Smooth and creamy without being heavy or syrupy.
