Vendale Ipséité reimagines the traditional Gose as a vibrant, fruit-forward experience. Fermented with a generous 120g/L of blueberries, the profile is dominated by fresh berry notes that complement the classic base of Pilsner and wheat malts. The aroma is a bright bouquet of forest fruit and citrusy coriander, leading into a palate where lactic tartness meets a delicate saline touch. The salt enhances the juicy blueberry character, while the coriander provides a lemony lift. Refreshing and crisp, it finishes dry with a lingering berry acidity, masterfully balancing the savory salt with the natural sweetness of the fruit and the grain.
Appearance. Vibrant deep purple to magenta; moderate pinkish-white head with good retention and light lacing; hazy and highly effervescent.
Aroma. High intensity; prominent fresh blueberry skins and juice; bright, lemony coriander; light bready wheat malt; clean, tart lactic acidity; no hop aroma or esters.
Taste. Initial burst of tart blueberry; moderate doughy malt flavor; light citrusy coriander; noticeable but restrained sea salt providing a savory, mouthwatering quality; very low bitterness; dry, fully-attenuated finish with refreshing acidity and a clean berry aftertaste.
Mouthfeel. Medium body; high carbonation; effervescent and tingly from the salt; very light alcohol warmth; smooth and crisp without astringency.
