The presence of Simcoe provides a classic forest-floor resin character that persists from the first sniff through the lingering finish. Despite its 7.8% strength, the beer maintains a high degree of drinkability through a lean, neutral malt backbone and a distinctive dryness. Appearance.Deep gold to light copper (8-10 SRM) with brilliant clarity. Pours with a moderate-sized, persistent, off-white head that leaves tight lacing.
Aroma.High intensity hop aroma featuring prominent resinous pine, grapefruit zest, and stone fruits like peach and apricot. Malt is very low and neutral, providing a clean, grainy base. Fermentation is clean with a very subtle fruity ester presence.
Taste.Initial impression is a punch of hop-derived resin and citrus. Mid-palate reveals stone fruit flavors of apricot and peach. Bitterness is high and frank but smooth, not harsh. Malt flavor is supportive but unobtrusive, showing light cracker notes. Finishes very dry and clean with a lingering bitterness and resinous aftertaste.
Mouthfeel.Medium body with a smooth, slightly oily texture. Carbonation is medium-high. A light, pleasant alcohol warmth is present but well-integrated. No astringency.
