Vault Wagon is a decadent, high-gravity Wild Specialty Beer that reimagines a classic confectionery treat through a modern pastry sour lens. The experience is defined by a lush, jammy strawberry profile that intermingles with the velvety indulgence of smooth dark chocolate. A foundation of sweet biscuit malt provides a structural tether for the ethereal, sugary notes of fluffy marshmallow, creating complex dessert-like layers. Despite its richness and 9.5% ABV, a delicate lactic sourness weaves through the finish, providing a necessary brightness that lifts the heavier cocoa and vanilla-marshmallow elements without overshadowing the fruit’s vibrancy.

Appearance. Deep ruby to mahogany with a persistent haze. Pours with a thick, rose-tinted tan head that shows moderate retention, leaving a creamy collar and light lacing on the glass.

Aroma. High intensity aromatics of ripe, macerated strawberries and vanilla-forward marshmallow. Secondary layers of dark cocoa and toasted grain provide a biscuit character. Very low acidic sharpness; the bouquet is dominated by sweet specialty ingredients.

Taste. Immediate impact of sweet strawberry jam and creamy marshmallow. The mid-palate introduces a rich, earthy dark chocolate flavor that provides depth. Malt flavors suggest a toasted, buttery biscuit. Bitterness is very low, primarily derived from the cocoa. The finish is long and sweet, balanced by a gentle, clean lactic acidity that cuts through the viscous mouthfeel.

Mouthfeel. Full-bodied and viscous with a creamy, mouth-coating texture. Carbonation is moderate to low. A gentle, integrated alcohol warmth is present, consistent with its 9.5% ABV. No significant astringency.
