It leads with a vibrant burst of sweet cherries, supported by a lush, aromatic layer of smooth vanilla and the distinct, marzipan-like nuttiness of almond. The use of flaked rice provides a soft, creamy textural base that balances the bright acidity characteristic of mixed fermentation. This dessert sour is complex and indulgent, evoking a rich pudding while maintaining a refreshing, tangy finish that prevents the sweetness from becoming cloying.
Appearance. Deep, hazy ruby to pinkish-red; pours with a moderate pink-tinted head that dissipates relatively quickly, leaving light lacing. Opaque from the inclusion of fruit and rice.
