This Wild Specialty Beer reimagines a classic dessert through a vibrant sensory lens. A bright, jammy profile of Scottish fruit provides a tangy core, balanced by the smooth, indulgent presence of creamy vanilla. The aroma is intensely fragrant, leading with ripe berry notes and a sweet, confectionary undertone. On the palate, the interplay of refreshing lactic acidity and dessert-like sweetness creates a lush, session-strength experience. While inspired by a rich pudding, the base remains a crisp session sour, ensuring a clean yet lingering finish that emphasizes the natural fruit character and the velvet-like texture of the vanilla. It is a harmonious blend of tartness and creamy sweetness.

Appearance. Deep ruby-pink to vibrant magenta with a dense, hazy opacity. The head is a light pink foam with moderate to poor retention, leaving minimal lacing.

Aroma. High intensity, dominated by jammy red berry esters and a prominent, sweet-creamy vanilla note. A clean, sharp lactic acidity provides a tangy backdrop, while very low bready malt provides a subtle doughy foundation. No hop aroma is present.

Taste. An immediate burst of tart Scottish fruit jam is balanced by a rich, pastry-like sweetness from the vanilla. Moderate lactic sourness provides a refreshing counterpoint to the dessert-inspired profile. Hop bitterness is extremely low (near zero), allowing the fruit and acidity to lead the balance. The finish is sweet and jam-forward with a lingering, creamy aftertaste.

Mouthfeel. Medium body with a surprisingly creamy, smooth texture for its ABV. Carbonation is moderate, providing a slight prickle that cuts through the sweetness. Alcohol warmth is non-existent, and there is no perceived astringency.
