This vibrant Wild Specialty Beer showcases the interplay between sharp, floral raspberries and succulent, sun-ripened peaches. Poured on nitro, it presents a visually stunning display of cascading bubbles that settle into a plush, cloud-like texture. The aroma is an immediate burst of fresh fruit preserves underpinned by a bright, lactic tartness characteristic of modern wild fermentation. Appearance. Deep pink to reddish-orange (10-15 SRM); opaque with a thick, creamy, pink-tinted head from the nitro pour that exhibits exceptional retention and dense lacing.
Aroma. High intensity of ripe, jammy raspberries and stone fruit peach sweetness. A sharp, clean lactic acidity is present, with very low funky wild fermentation esters and no detectable hop aroma.
Taste. Initial impression is a sharp, refreshing lactic tartness. Dominant flavors of tart raspberry skins and fleshy, juicy peaches. Malt is a neutral backdrop, providing just enough structure. No hop bitterness is perceived. The finish is dry and fruit-focused, with a lingering tang of raspberry and a soft, stone-fruit aftertaste.
Mouthfeel. Medium body with a creamy, velvety texture due to the nitrogenation. Carbonation feels very low and smooth rather than prickly. No alcohol warmth; a very slight tannic astringency from the fruit skins adds complexity.
