Imperial Stout 16 º
This Imperial Stout, a collaboration between Vault City and Nerdbrewing, delivers a massive sensory experience inspired by the double-deep-fried traditions of Scotland. Jet black and viscous, it opens with an intense aroma of gingerbread spices—sharp ginger and warm cinnamon—layered over bittersweet chocolate and roasted coffee. The palate is decadently full, offering thick molasses sweetness and dark fruit esters like raisin and prune. Despite the staggering 16% ABV, the heat is integrated, providing a deep, glowing warmth that carries the spiced, roasty finish. It is an unctuous, festive powerhouse that balances aggressive roast with festive spice and significant malt depth.
Appearance. Opaque jet black (SRM 40+). A thin, dark tan to mocha-colored head with low retention; high viscosity is visible through thick legs on the glass.
Aroma. High intensity; a pungent bouquet of ginger and cinnamon dominates, supported by rich, dark-roasted malts evoking espresso and cocoa. Moderate esters of blackcurrant and raisin are present alongside a smooth, vinous alcohol character.
Taste. The initial impression is a wave of spice-laden sweetness reminiscent of fresh gingerbread. Mid-palate reveals complex layers of burnt sugar, dark chocolate, and toasted grain. Bitterness is moderate but firm enough to balance the significant residual sugar. The finish is long and warming with lingering notes of holiday spices and roasted malt.
Mouthfeel. Very full-bodied and chewy with a velvety, luscious, and coating texture. Carbonation is low. Significant alcohol warmth is present, providing a smooth, glowing sensation without being sharp or solventy.
