This session sour delivers a bright, citrus-forward profile driven by the sharp, clean acidity of Italian lemon juice and the zesty, floral complexity of blood orange. A tropical undercurrent of lush guava rounds out the sharp tartness, providing a soft fruit depth that balances the assertive lactic tang. Appearance. Pours a vibrant, hazy coral-orange hue with a frothy, pink-tinted head that shows moderate to poor retention, leaving light lacing. SRM 5 with a distinct fruit tint.
Aroma. High intensity of fresh citrus and tropical fruit. Immediate notes of sharp Italian lemon zest and sweet-tart blood orange dominate. A secondary layer of musky, sweet guava provides a tropical depth. Malt character is minimal, appearing as a faint crackery note. Fermentation is clean with a bright lactic acidity and very low wild funk.
Taste. An assertive lactic tartness leads, immediately followed by the zing of Italian lemon and the pithy, berry-like richness of blood orange. The guava contributes a fleshy fruit flavor through the mid-palate, softening the high acidity without adding cloying sweetness. Hop bitterness is negligible. The finish is crisp, bone-dry, and intensely refreshing with a lingering citrus aftertaste.
Mouthfeel. Light-bodied and highly effervescent, creating a spritzy, tongue-tingling sensation. Alcohol warmth is non-existent given the sessionable strength. A very slight, pleasant fruit-skin astringency enhances the overall dryness.
