Hayfield is an elevated take on the traditional Farmhouse Ale, presenting a robust profile shaped by its 7.8% ABV and careful barrel aging. This strong Saison opens with a complex bouquet of pome fruit and spicy black pepper, underpinned by a rustic, grainy malt backbone. The time spent in wood introduces a sophisticated layer of toasted oak and subtle vanillin, which melds seamlessly with the characteristic Belgian yeast esters. Effervescent and bone-dry, it balances moderate hop bitterness with a gentle alcoholic warmth and a faint tannic structure, resulting in a refined, multifaceted finish that celebrates both rural tradition and cellar craftsmanship.

Appearance. Deep gold to pale amber with a slight, rustic haze. It supports a dense, long-lasting, rocky ivory head that leaves persistent Belgian lacing on the glass.

Aroma. High aromatic intensity featuring a blend of spicy black pepper phenolics and fruity esters reminiscent of overripe pear and orange peel. A soft, grainy malt character is complemented by subtle toasted oak and a hint of vanilla from the barrel aging.

Taste. A complex interplay of citrusy esters and peppery spice leads the palate, followed by a soft, grainy malt richness. The barrel aging adds a light woody tannin and a whisper of vanilla. Hop bitterness is moderate but assertive, enhanced by the high attenuation. It finishes exceptionally dry with a lingering spicy and earthy aftertaste.
