The 2025 release of Ghost Elephant is an evocative Imperial Stout that marries deep roasted complexity with the maritime intensity of Islay. Aged in Caol Ila barrels that previously held Oloroso Sherry, the sensory profile is defined by a delicate veil of peat smoke, medicinal iodine, and sea spray. These rugged notes are elegantly tempered by the sherry influence, manifesting as rich prunes, raisins, and toasted wood. The result is a profoundly layered experience where the charred malt heart of the beer and the sophisticated spirit character achieve a harmonious, warming balance that lingers long after the final sip.

Appearance. Jet black and completely opaque. It pours with a thick, creamy, deep mocha-colored head that shows moderate retention. High viscosity is apparent, leaving thick legs on the glass surface.

Aroma. High intensity and extremely complex. Dominant notes of dark chocolate, espresso, and charred grain are layered with distinctive peat smoke, iodine, and seaweed. Secondary aromas of prunes, raisins, and a nutty Oloroso Sherry oxidation blend with spicy oak and a clean, warming alcohol presence.

Taste. The initial impression is one of rich, bittersweet chocolate and heavy roast, followed by a savory wave of peat and sea salt. Mid-palate flavors of dark dried fruits like prunes and raisins provide a balanced sweetness. The finish is deep and lingering, featuring toasted oak, earthy smoke, and a firm bitterness that cuts through the beer's substantial gravity.

Mouthfeel. Full-bodied and exceptionally chewy with a velvety, luscious texture. Carbonation is low to moderate, enhancing the beer's silkiness. A significant, smooth alcohol warmth is present, well-integrated and glowing rather than sharp.
