This Watergeus Special Matured Blend showcases an exceptional depth of character derived from its inclusion of rare five and six-year-old lambic. The sensory profile is defined by a sophisticated, multi-layered funk—reminiscent of aged leather, horse blanket, and damp hay—intertwined with a refined, sharp acidity. Vibrant notes of lemon rind, green apple, and rhubarb pierce through the rustic complexity. The extended cellar aging of the wheat and malt components introduces subtle nuances of weathered oak and a hint of vanilla. Effervescent and bone-dry, this Gueuze culminates in a clean, puckering finish that emphasizes its traditional wild fermentation heritage.
Appearance. Deep golden color (approximately 6 SRM) with brilliant clarity. It supports a thick, mousse-like, rocky white head with exceptional retention and lively, rising carbonation.
Aroma. Moderate to high intensity with a complex bouquet of barnyard funk, leather, and earthy hay. Subtle citrus zest and pome fruit esters are supported by a faint, grainy wheat malt presence and well-aged oak notes.
Taste. Initial sharp tartness evolves into a balanced, complex sourness. Flavors of rhubarb, lemon, and aged cider-like esters dominate, backed by rustic funk and very low bready malt. No hop flavor or bitterness; the balance is driven by acidity, leading to a bone-dry, crisp finish.
