This Gueuze is a complex evolution of the style, enriched by the aromatic addition of heather honey and a portion of Vlaamsbruin. The sensory profile opens with a rustic, funky bouquet featuring leather and horse blanket, seamlessly integrated with the intense floral and herbal perfume of heather honey. The appearance is a deep golden to amber with a persistent, mousse-like head. On the palate, a vibrant lactic acidity is tempered by the subtle caramel and dark fruit nuances of the Vlaamsbruin component. Notes of wildflower nectar, beeswax, and earthy spice lead to a bone-dry, effervescent finish that expertly balances wild funk with refined, honeyed depth.
Appearance. Deep golden to amber (SRM 7-10) with slight haze; features a thick, rocky, persistent white head with excellent lacing and high effervescence.
Aroma. High intensity of wild funk including horse blanket, hay, and leather; strongly accented by floral heather honey, beeswax, and subtle dark fruit esters like plum or raisin from the Vlaamsbruin blend.
Taste. Sharply tart and moderately sour with a complex funkiness that mirrors the aroma; low bready malt is complemented by notes of caramel and herbal honey. Bitterness is nearly absent, with acidity providing the balance. Finish is bone-dry and crisp with a lingering earthy, honey-like aftertaste.
Mouthfeel. Medium-light body with high carbonation that creates a prickly, champagne-like sensation. Low astringency and a very light, well-integrated alcohol warmth.
