This specialized Gueuze blend presents a sophisticated sensory profile where traditional spontaneous fermentation meets the aromatic depth of heather honey. The nose is dominated by a moderately high lactic sourness and a rich bouquet of wild funk—reminiscent of wet hay and aged leather—layered with the distinctive floral, slightly herbal perfume of heather honey. The addition of Vlaamsbruin introduces subtle notes of dried plum and dark malt complexity. On the palate, a sharp, citrusy acidity is balanced by a whisper of honeyed sweetness and earthy oak. It finishes bone-dry and effervescent, leaving a lingering impression of tart pome fruit and rustic barnyard character.

Appearance. Deep golden to light amber (7-9 SRM); excellent clarity with an effervescent rise of fine bubbles; thick, rocky, mousse-like white head with exceptional persistence and lacing.

Aroma. High intensity; complex lactic sourness and a pungent funk consisting of horse blanket, leather, and dusty hay. The heather honey contributes a distinct floral and herbal perfume, while the Vlaamsbruin component adds faint notes of dark fruit, specifically raisin and plum. No hop aroma; light oak and a trace of honey-like malt sweetness are present.

Taste. Intense but balanced sourness with a sharp citrus and rhubarb-like tartness. The flavor follows the aroma with significant funk and earthy complexity. The heather honey provides a floral depth rather than residual sweetness, while the Vlaamsbruin portion lends a supportive, bready malt backbone with hints of dark stone fruit. Bitterness is negligible; the finish is very dry, crisp, and funky with a lingering tart aftertaste.

Mouthfeel. Medium-light body with a soft, velvety texture; high carbonation creates a lively, prickly sensation on the tongue. Provides a light puckering tartness without harsh astringency. A very subtle alcohol warmth is perceptible.
