Droef is a sophisticated Italian Grape Ale that bridges the gap between wild-fermented beer and natural wine. This blend utilizes the brewery's spontaneously fermented Watergeus base, integrated with organic Frankenthaler and Southern Italian Aglianico grapes. The result is a profile defined by a vibrant red fruit character, reminiscent of cherries and blackberries, interwoven with the rustic complexity of a barnyard funk. The Aglianico grapes contribute a wine-like structure and depth, while the Frankenthaler adds juicy, bright notes. Expect a refreshing acidity that cleanses the palate, balanced by a sophisticated malt backbone and the subtle earthy nuances characteristic of traditional spontaneous fermentation.

Appearance. SRM 18-22. Deep ruby to reddish-copper with a slight haze from spontaneous fermentation. Pours with a light pinkish-white head that exhibits medium-low retention and thin lacing.

Aroma. High intensity with a complex marriage of red grape must and wild fermentation. Prominent notes of black cherry, leather, and dark berry from the Aglianico grapes. Moderate wild character including barnyard, earthy funk, and a light goaty note from the Watergeus. Malt is restrained and bready, while hop aroma is absent.

Taste. Initial impression is wine-like and tart. Medium-high grape flavor featuring sour cherry, blackberry, and plum. The malt is a supportive, neutral base that allows the sharp but balanced acidity to lead. Hop bitterness is very low, allowing the vinous tannins and light oak earthy notes to provide structure. The finish is bone-dry and lingering with a refreshing lactic and fruit-skin tartness.

Mouthfeel. Medium body with a characteristic natural wine fullness. Medium-high carbonation provides a lively, effervescent prickle on the tongue. Gentle alcohol warmth is present but well-integrated at 7.5%. Very low astringency from grape skins.
