Appearance. Intense pink to deep rose hue (SRM 5-8 equivalent). Brilliant, crystalline clarity achieved through multi-phase filtration. Still to very lightly petillant with noticeable legs indicating the strength and sugar content.
Aroma. High intensity of red forest fruits, specifically dominant notes of tart currant and sweet cherry. Clean, floral honey character provides a solid base without overshadowing the fruit. Exceptional fermentation purity with no detectable phenols or harsh fusels.
Taste. Initial impression is a harmonious blend of honey sweetness and bright berry acidity. Flavors of red currant and cherry are prominent, providing a tart counterpoint to the semi-sweet honey backbone. No hop bitterness or malt presence. The balance is slightly acidic, leading to a long, clean, and refreshing fruit-filled finish.
Mouthfeel. Medium body with a smooth, velvety texture. Noticeable alcohol warmth that remains well-integrated and pleasant. Low to no carbonation, providing a mouthfeel similar to a still rosé wine. No astringency despite the fruit maceration.
