This Australian Sparkling Ale presents a refreshing interpretation of the classic style, energized by contemporary hop selections. Amarillo and Cascade hops introduce a vibrant sensory layer of citrus, passionfruit, and ripe peaches, which elevates the traditional pome fruit esters typical of the style. The malt backbone, enriched by the targeted use of Crystal malt, provides a subtle honey-like sweetness that balances a firm, crisp bitterness. Highly carbonated and spritzy, the experience is defined by its clean, dry finish and a lingering herbal-citrus resonance. Appearance. Medium gold (5–6 SRM). Tall, frothy, persistent white head with fine bubbles and significant lacing. Brilliant clarity if decanted, though typically hazy if the yeast is roused before pouring.
Aroma. Moderate intensity featuring a clean, grainy malt base with a distinct honey-like sweetness. Hop character is forward for the style, showcasing citrus, passionfruit, and peach. Yeast-derived esters contribute subtle notes of pear and red apple.
