This Franconian-style Munich Dunkel, a collaboration with Braybrooke, showcases a sophisticated malt profile driven by traditional double decoction. Poured mahogany, it presents an inviting nose of toasted bread crust and toffee, subtly accented by notes of tobacco and a whisper of smoke from the dark malts. The palate is defined by rich biscuit and toast flavors, reflecting a traditional malt-forward character. While true to the style’s heritage, the inclusion of East Kent Goldings hops provides a refined herbal backbone, leading to a finish that is noticeably more crisp and bitter than typical Munich examples, honoring the rustic Franconian tradition of the region.

Appearance. Deep mahogany with garnet highlights (SRM 22–26). Topped by a creamy, persistent, light-tan head with fine lacing. Brilliant clarity despite the depth of color.

Aroma. Moderate-high malt intensity featuring deeply toasted bread crust, biscuit, and a touch of toffee. A subtle, rustic tobacco note is present alongside a faint, clean wisp of smoke. Low earthy and herbal hop aroma from the East Kent Goldings. Clean fermentation profile with no esters.

Taste. Rich initial impression of toasted malts followed by layers of biscuit and dark bread crust. Malt sweetness is restrained, balanced by a firm hop bitterness that is more pronounced than typical Munich versions. Subtle earthy hop flavor. The finish is crisp and medium-dry with a lingering toasted malt aftertaste and no harsh roast or burnt character.

Mouthfeel. Medium-full body with a smooth, dextrinous, and slightly creamy mouthfeel. Moderate carbonation. Very smooth lager character with no alcohol warmth and no grain-derived astringency.
