This Imperial Stout presents a masterful synthesis of dark intensity and refined barrel aging. The base beer offers a decadent foundation of dark chocolate and roasted coffee, enriched by the dual influence of Buffalo Trace bourbon and Highland Park Scotch barrels. This secondary maturation introduces layers of charred oak and sweet vanilla alongside distinct whispers of peat smoke and dried fruit. It is an unapologetically bold experience where the high alcohol is seamlessly integrated into a velvety texture. Complex and harmonious, it balances bittersweet roast with a lingering warmth that reflects its sophisticated journey through two distinct spirit casks.
Appearance. Jet black and completely opaque. It pours with a thick, deep tan head of moderate retention, eventually settling into a persistent rim. High alcohol and viscosity are apparent through prominent legs on the glass.
Aroma. High intensity and immensely complex. Dominant aromas of bittersweet chocolate and espresso-like roasted malt lead, followed by rich vanilla and spicy charred oak from the bourbon casks. Distinctive whispers of Highland Park Scotch contribute a subtle, earthy peat smoke. Esters of dried plums and raisins weave through a noticeable but smooth alcohol presence.
Taste. Intensely flavored and layered. The initial impression is of rich dark chocolate and heavy roast, supported by a firm bitterness that balances the residual sweetness. The palate evolves to reveal bourbon-derived caramel and vanilla, while the Scotch casks provide a subtle smoky depth. Dried fruit esters and a hint of licorice emerge in the mid-palate. The finish is lingering, bittersweet, and profoundly warming.
Mouthfeel. Full-bodied and exceptionally chewy with a luscious, velvety texture. Carbonation is low to moderate. A smooth, gentle alcohol warmth is prominent and noticeable, with very low astringency from the oak and roasted grains.
