The palate is defined by a sharp, refreshing acidity that emphasizes the citrus character, while a light, crackery malt base provides just enough structure to keep the beer balanced. Appearance. SRM 3–5. Pours a brilliant to slightly hazy straw-gold. Features a thin, bright white head with moderate retention and light lacing; acidity and citrus oils may cause the foam to dissipate relatively quickly.
Aroma. High intensity aromatics of fresh lemon zest and lime juice dominate, followed by a clean, sharp lactic sourness. Subtle notes of sourdough or cracker-like malt are present in the background. Fermentation esters are low and integrated with the fruit; hop aroma is absent.
Taste. The initial impression is a burst of tart citrus, featuring distinct lemon and lime flavors that are authentic and zesty. A clean lactic acidity provides a firm tartness. Malt flavor is low, suggesting white bread or cracker. Bitterness is very low, as the acidity provides the primary balance against the fruit. The finish is bone dry and very short, with a lingering citrus peel aftertaste.
Mouthfeel. Light body with a crisp, lean texture. Carbonation is high and prickly, enhancing the refreshing nature of the sourness. Alcohol warmth is not perceived. Very low astringency from the citrus zest.
