Upland Brewing Company Pawpaw

Fruit Lambic 6.6 º
This Wild Specialty Beer showcases the unique sensory character of the native Indiana Pawpaw, often called the Indiana Banana, integrated into the brewery's Basis blond ale. It opens with a complex, high-intensity bouquet of tropical fruit, reminiscent of a mango-banana hybrid, underpinned by a moderate lactic acid tanginess. The wild fermentation provides a rustic, earthy funk that complements the creamy yet bright fruit profile. On the palate, the soft tropical notes are balanced by a clean acidity and a dry, wood-tinged finish. It is a harmonious expression of native North American fruit and nuanced aging, resulting in a refreshing and sophisticated golden sour ale.
Appearance. Deep golden to pale amber (7–9 SRM). Features a thin, white head with moderate to low retention and light lacing. Clarity shows a slight haze, typical for beers aged on fresh fruit and containing wild yeast.
Aroma. High intensity with a dominant pawpaw character, offering pungent notes of mango, melon, and bruised banana. A moderate wild funk presents as earthy hay and light leather. Malt is low, suggesting cracker or honey, while hop aroma is absent. A clean lactic acidity provides a sharp, bright top note.
Taste. The initial impression is a bright, lemony tartness followed by lush tropical fruit flavors of pawpaw. The fruit contributes a unique custard-like sweetness that balances the fermentation dryness. Malt flavor is minimal and bready. Bitterness is very low to absent. The finish is dry and puckering with a lingering hint of tropical esters and a soft, woody tannin.
Mouthfeel. Medium-light body, though the fruit character provides a deceptive silkiness. Carbonation is moderate to high, creating a lively effervescence. Alcohol warmth is subtle and well-integrated. Very low astringency from the fruit skins and barrel aging.
