This barrel-aged Wild Specialty Beer offers a vibrant sensory journey, defined by the addition of Montmorency cherries. It pours a brilliant deep red with a lively, pink-tinted head. The aroma is intensely focused on tart cherries, accented by vinous wine notes, crisp cider, and a hint of rustic barnyard funk. On the palate, flavors of succulent cherry pie and bright lactic tartness meld with subtle woody tannins from the barrel aging. The zesty effervescence enhances its refreshing quality, leading into a bone-dry finish where a delicate, lingering cherry fruitiness remains as the final impression.
Appearance. Rich, deep red with bright clarity; a frothy, pink-hued head shows moderate retention and fine lacing. Zesty effervescence is visible.
Aroma. High intensity; dominant tart Montmorency cherry aromatics are supported by wine-like esters, apple cider notes, and a distinct but well-integrated barnyard Brettanomyces character. Malt is negligible.
Taste. Sharp, refreshing lactic tartness leads into a complex profile of cherry pie and stone fruit. Secondary notes of oak and mild earthy funk provide depth. Bitterness is nearly absent, allowing the acidity to provide balance. The finish is very dry and crisp with a persistent cherry skin aftertaste.
Mouthfeel. Medium-light body with high carbonation that creates a prickly, zesty sensation. Very low alcohol warmth; a slight tannic astringency from the fruit skins and barrel aging adds structure.
