This vibrant Brett Beer showcases a sophisticated mixed fermentation led by three distinct strains of Brettanomyces bruxellensis, which impart a complex tapestry of tropical fruit and dark berry esters. The sensory experience is defined by the generous addition of Spanish clementine juice and zest, providing a bright, sun-ripened citrus core, while a delicate touch of Lemone di Sorrento juice and zest adds a sharp, balancing acidity. Expect a highly attenuated, bone-dry profile where the wild, funky character of the Brettanomyces bruxellensis beautifully complements the essential oils of the citrus, resulting in a crisp, effervescent, and deeply aromatic wild ale.

Appearance. Pours a hazy, pale orange to light amber (SRM 5-7) with a frothy, white, moderately persistent head that leaves fine lacing on the glass.

Aroma. High intensity aromatics of fresh clementine and lemon zest dominate, followed by a complex Brettanomyces bruxellensis profile featuring pineapple, mango, and a hint of wild blackberry. Light earthy funk, hay, and a neutral, cracker-like malt backbone are present.

Taste. Bright, juicy clementine and sharp Lemone di Sorrento citrus lead the palate. The fermentation character adds layers of tropical fruit and subtle dark berries. Hop bitterness is very low, allowing the citrus pith and high attenuation to provide structure. Finishes exceptionally dry and crisp with a lingering citrus zest and a mild, funky, earthy aftertaste.

Mouthfeel. Medium-light body with high, effervescent carbonation that provides a prickly, refreshing sensation. A light, well-integrated alcohol warmth is present, with no significant astringency beyond a touch of citrus zest tannin.
