This Wild Specialty Beer, presented as a cask-conditioned sour, offers a vibrant yet approachable sensory experience. The aroma opens with a crisp lactic tartness and subtle notes of lemon zest, complemented by a light, earthy funk reminiscent of hay and stone fruit. On the palate, a zingy acidity leads the way, supported by a lean, bready malt backbone. The cask service provides a uniquely soft, rounded mouthfeel that tempers the sharpness of the wild fermentation. It finishes remarkably dry and refreshing, with a lingering citrus brightness and a clean, puckering sensation that invites another sip.
Appearance. Pale straw to light gold (3–5 SRM). Pours with a delicate, creamy white head with moderate to low retention, typical of cask conditioning. A slight, natural haze is present.
Aroma. Moderate intensity. Notable lactic acidity provides a lemony sharpness, while wild yeast contributes mild earthy, hay-like, and floral notes. Very low hop aroma with a faint hint of spice.
Taste. Initial impression is a sharp, clean sourness. Light grainy and crackery malt flavors provide a minimal foundation. The fermentation character is dominant, featuring citrusy esters and a touch of wild funk. Bitterness is nearly imperceptible, allowing the acidity to provide balance. Finishes very dry and clean.
Mouthfeel. Light body with a soft, natural carbonation from the cask service. Very smooth with no alcohol warmth. A slight puckering acidity enhances the dry finish without being harsh.
