This American Wild Ale presents a stunning sensory profile centered on a massive infusion of fresh raspberries. The aroma is a sophisticated dialogue between jammy fruit and the rustic complexities of Brettanomyces, yielding notes of wild berries, wet hay, and a faint earthy leather. On the palate, the experience is defined by intense raspberry tartness and a bone-dry finish typical of the Brett Beer style. The lean malt backbone allows the fruit’s natural acidity to sparkle, while high effervescence cleanses the palate. It is a vibrant, fruit-forward wild ale that balances bright acidity with a lingering, funky complexity.
Appearance. Vibrant deep rose to ruby red color (10-15 SRM from fruit). The beer shows a slight haze and is topped by a frothy, light pink head with moderate retention and fine lacing.
Aroma. High intensity of fresh, jammy raspberries dominates the nose. Supporting this is a moderate Brettanomyces character of barnyard, hay, and a light goat-like funk. Esters of stone fruit are present, while malt and hop aromas are negligible.
Taste. Initial impression is of sharp, tart raspberry fruit. The malt flavor is very low, providing just enough structure to support the fruit. High attenuation leads to a crisp, bone-dry finish. Hop bitterness is low, and the Brett character adds a moderate earthy and fruity complexity without being overbearingly funky. No diacetyl or harshness.
Mouthfeel. Medium-light body with high carbonation that creates a refreshing, prickly sensation. No alcohol warmth is perceived at 6.5%, and there is no astringency despite the heavy fruit addition.
