Undarius Kill Fruit presents as a quintessentially refreshing Berliner Weisse, defined by its sharp, clean lactic acidity and spritzy effervescence. On the nose, a dominant sourdough and raw bread dough character emerges from the Pilsner and wheat malt grist, complemented by subtle esters of tart green apple and lemon zest. The palate is defined by a bracing, crisp sourness that remains bright and clean rather than vinegary, supported by a delicate, grainy malt backbone. At 4% ABV, it carries a light, nimble body with a bone-dry finish, making it an exceptionally quenching and nuanced example of this classic German style.
Appearance. Very pale straw color (2-3 SRM). Topped by a large, dense white head that recedes quickly due to high acidity. Displays slight haze but remains mostly clear with visible, vigorous carbonation bubbles.
Aroma. Moderate to high intensity. Characterized by a sharp, clean lactic sourness and a distinct sourdough or raw bread dough malt profile. Light floral notes accompany subtle fruity esters reminiscent of lemon skin and tart apricot. No hop aroma is present.
Taste. Initial impression is a punchy, clean lactic sourness that provides the primary balance. Low bready and grainy wheat flavors provide a brief malt presence before giving way to a bone-dry finish. Flavors of citrus and tart apple are restrained but present. Hop bitterness is undetectable, and there is no hop flavor or acetic vinegar character.
Mouthfeel. Light body that avoids being watery. Very high carbonation creates a prickly, effervescent sensation on the tongue. Crisp, refreshing acidity with zero alcohol warmth.
