Gaia is a vibrant, experimental Gose that leans into garden-fresh complexity. The aroma leads with a sharp lactic tang and the tropical, tart scent of kiwi, quickly followed by a savory, botanical blend of celery and nutty arugula. On the palate, a crisp doughy malt base supports layers of green fruit acidity and a distinct, piquant snap of green peppercorns. The finish is remarkably dry and refreshing, characterized by a light saline touch and a lingering herbal freshness. This collaboration between unCertain and Reketye transforms a historical wheat ale into a savory, verdant sensory experience that remains remarkably balanced despite its unusual ingredients.
Appearance. SRM 3-4. Pale gold with a moderate to full haze. Tall white head with tight bubbles and fair retention. Highly effervescent.
Aroma. Moderate to high intensity. Bright lactic sourness and tart kiwi dominate, accompanied by a unique vegetal freshness reminiscent of celery and peppery arugula. Subtle spice notes of floral green peppercorns emerge as the beer warms. No hop aroma or esters.
Taste. Initial impression is a tart, refreshing acidity driven by both fermentation and kiwi. Moderate bready wheat malt flavor provides a foundation for savory notes of celery and a spicy, herbal kick from green peppercorns and arugula. Bitterness is very low. A light salt character enhances the flavors without being overtly salty. Finishes very dry and clean with a lingering herbal, peppery aftertaste.
Mouthfeel. Medium-light body. High carbonation provides an effervescent, lively mouthfeel. The salt content adds a slight tingly, mouthwatering quality and a subtle roundness. No astringency or significant alcohol warmth.
