This hazy, straw-colored Hazy IPA bursts with an intense, juicy bouquet driven by a thoughtful selection of hops. The dry-hop profile of Amarillo BBC, Eclipse, and Simcoe delivers dominant notes of sweet mandarin, zesty citrus peel, and fresh pine needles, seamlessly layered over tropical passion fruit and soft, sweet apricots. A gentle, bready malt backbone supports the massive hop charge without clashing. It drinks incredibly smooth, offering a soft, pillowy texture that carries these vibrant hop characters into a clean, off-dry finish with beautifully restrained bitterness.
Appearance. Pale straw to deep yellow in color (SRM 3-5) with a dense, opaque, uniform haze that catches the light with a soft shine. Supports a thick, rocky, meringue-like white head with excellent retention and beautiful, clingy lacing.
Aroma. High intensity hop aroma dominated by sweet mandarin, ripe apricot, and tropical passion fruit. Zesty citrus peel and a subtle, fresh pine needle undertone add complexity. Background malt is clean and lightly bready, while the fermentation profile is clean and supportive with no harsh alcohol notes.
Taste. Flavors lead with an initial juicy burst of sweet orange, soft apricot, and tropical passion fruit. The mid-palate introduces a zesty citrus peel crispness and a hint of fresh pine. Malt flavors are low and doughy, acting as a soft canvas. Bitterness is low to medium-low and well-restrained, leading into a smooth, off-dry, and juicy finish that is free of any hop burn.
Mouthfeel. Medium body with a characteristically soft, smooth, and pillowy texture. Moderate carbonation. No harshness, starchiness, or astringency. A very light, well-integrated alcohol warmth is present, consistent with its strength.
