Cherry Garsour is a decadent take on the Straight Sour Beer, expertly blending the tartness of a high-gravity Berliner Weisse base with the rich indulgence of a dessert. A massive addition of fresh tart cherries provides a vibrant fruit core, complemented by layers of dark chocolate, sweet vanilla, and fudge. The experience evokes a classic cherry and chocolate ice cream, balancing sharp lactic acidity against a velvety, cream-like sweetness. While the acidity remains refreshing, the addition of cacao and vanilla softens the profile, resulting in a complex, pastry-influenced sour that marries bright fruit with deep, confectionary undertones.

Appearance. Deep ruby red with garnet highlights (25–30 SRM). Moderate pinkish-tan head with fair retention and light lacing. Hazy to opaque due to heavy fruit and adjunct additions.

Aroma. High intensity. The aroma is dominated by a sharp lactic sourness and a burst of tart, fresh cherries. Underlying notes of decadent dark chocolate and sweet vanilla create a dessert-like bouquet, reminiscent of fudge. No hop aroma. Malt character is low, offering a faint bready backdrop. Clean fermentation with moderate fruity esters.

Taste. Initial tartness from fresh cherries quickly transitions into rich dark chocolate and fudge-like sweetness. A clean, prominent lactic sourness provides a refreshing counterpoint to the decadent vanilla and cream flavors. Hop bitterness is undetectable, and hop flavor is absent. The malt provides a subtle bready foundation. The finish is lingering, with a persistent harmony of tart fruit and chocolate.

Mouthfeel. Full body with a velvety, smooth texture. Carbonation is moderate. A subtle alcohol warmth is present but well-integrated. Crisp acidity provides a mouth-watering sensation without being harsh or astringent.
