ULTIMA The HYPE is Gone
This American IPA showcases a modern sensory profile, blending the intense tropical fruit potential of a thiol-releasing yeast with a layered hop charge. The aroma is dominated by pink guava, passionfruit, and ripe mango, driven by the unique character of HBC 586 and the concentrated oils of Cryo Simcoe and Cryo Cascade. These tropical layers are anchored by classic notes of grapefruit zest and resinous pine. On the palate, a lean, bready malt backbone supports a firm bitterness, allowing the vibrant hop flavors to remain the focal point. It finishes crisp and decidedly dry, inviting another sip of its complex fruit-forward character.
Appearance. Deep gold color (approximately 8 SRM) with brilliant clarity. Pours with a dense, creamy white head that exhibits excellent persistence and leaves intricate lacing on the glass.
Aroma. High intensity hop-forward bouquet featuring explosive tropical fruit notes of passionfruit and guava. Complementary layers of grapefruit, citrus peel, and a hint of forest pine are present. Malt is low and clean with a bready, cracker-like quality. Fermentation is clean with amplified tropical esters from the thiol-active yeast.
Taste. Initial impression is a burst of tropical fruit—mango and passionfruit—followed by citrus pith and resin. Medium-high hop bitterness provides a clean, sharp counterpoint to a low, grainy-sweet malt foundation. The balance is decidedly hoppy, leading to a dry, crisp finish with a lingering aftertaste of citrus oils and tropical fruit.
Mouthfeel. Medium body with a smooth, slightly oily texture. Carbonation is medium-high, providing a lively prickle on the tongue. There is a very light, well-integrated alcohol warmth without any harshness or astringency.
