This Wild Specialty Beer presents a vibrant sensory journey, blending the rustic character of Extra Pale and Wheat malts with a lush tropical profile. Aromas of ripe Mango and Nectarines lead the charge, supported by the subtle spicy and citrus notes of Kazbek hops. The wild fermentation imparts a delicate tartness and complexity that balances the fruit. On the palate, a unique interplay emerges as Sea salt enhances the fruit’s vibrancy while a dusting of Cinnamon adds a warming, earthy depth. It finishes dry and crisp, with the salt and acidity providing a refreshing, multi-layered experience.
Appearance. Hazy, golden-orange hue (5-8 SRM) reflecting the addition of mango and nectarines. Thin, white head with moderate retention; slight lacing.
Aroma. High intensity. Dominant aromas of fresh mango and stone fruit (nectarine). Underlying funk from wild yeast (leather, hay) is present but secondary to fruit. Kazbek hops contribute a light lemon-zest and spicy herbal note. Subtle earthy cinnamon and a mineral-like saltiness in the background.
Taste. Initial burst of tart stone fruit and tropical mango. The malt base of Extra Pale and Wheat provides a soft, bready foundation. Fermentation character is moderately sour with a light funk. Cinnamon provides a subtle woody spice that complements the fruit acidity. Mid-palate reveals a saline streak from the sea salt, leading to a bone-dry, crisp finish. Bitterness is low, allowing the acidity to provide the structure.
Mouthfeel. Medium-light body with a slightly creamy texture from the wheat. High carbonation creates a lively, prickly sensation. No alcohol warmth. A faint, pleasant astringency from fruit skins and salt presence.
