This Wild Specialty Beer presents a complex, multi-layered sensory experience. Bright, tropical aromas of Mango and juicy Nectarines lead, followed by a sophisticated earthy undertone of toasted Pistachio and a delicate dusting of Cinnamon. The wild fermentation character introduces a refreshing lactic acidity that sharpens the fruit profile. On the palate, the Sea Salt provides a subtle savory tension, heightening the perception of stone fruit while ensuring a crisp, dry finish. The interplay between sweet fruit esters, warm spice, and a funky, farmhouse-influenced base creates a vibrant, highly sessionable ale with exceptional depth and balance.
Appearance. Hazy, golden-orange hue (SRM 6-8) with a fine, off-white head that shows moderate to low retention, common in acidic wild ales.
Aroma. Moderate to high intensity. Prominent tropical Mango and stone fruit Nectarines are balanced by a light, woody Cinnamon spice and an earthy nuttiness from Pistachio. Moderate lactic sourness and a faint funky, leathery wild yeast character are present.
Taste. Initial tartness with dominant fruit flavors of Mango and Nectarine. The Sea Salt adds a distinct savory mineral quality that cuts through the acidity. Mid-palate reveals subtle earthy Pistachio notes, while the finish is bone-dry with a lingering hint of Cinnamon spice. Hop bitterness is negligible, as acidity provides the structural balance.
Mouthfeel. Medium-light body with high, lively carbonation. A slight mineral prickle from the salt enhances the crispness. No alcohol warmth is perceived at this gravity.
