Appearance. Yellow (3-4 SRM) with a moderate to full haze. Renders a moderate white head with tight bubbles and good retention; highly effervescent.
Aroma. Moderate-high intensity featuring sharp lactic acidity and lemon-like citrus. Distinctive savory, broth-like umami notes are present alongside a light, woody cinnamon spice. Malt character is reminiscent of sourdough bread or uncooked dough. No hop aroma.
Taste. Initial impression is sharply tart and refreshing. Moderate doughy malt flavor is quickly overtaken by a complex savory layer of salt and MSG-driven umami. Light pome fruit esters and a hint of cinnamon provide depth. The habanero adds a very low, tingly heat that persists without being aggressive. Finishes very dry and acidic with a lingering saline quality; bitterness is very low and hops are not perceived.
Mouthfeel. Medium body with a rounded, mouthwatering quality provided by the salt and MSG. High carbonation provides an effervescent, scrubbing texture. Features a very light back-of-the-throat warmth from the peppers, though alcohol warmth is negligible.
