This Wild Specialty Beer presents a complex collision of tart fruit and bright aromatics. Vibrant blackcurrants drive a deep, stained-glass hue and a sharp, berry acidity that interlocks with the citrus-forward profile of Kenya Chorongi coldbrew coffee. The malt base of Extra pale malt, Wheat, and Oat flakes provides a soft, pillowy texture that tempers the wild fermentation's tang. Kazbek hops contribute subtle earthy and spicy undertones, bridging the gap between the roasted coffee beans and the jammy fruit. It is a bold, modern interpretation that balances funk with sophisticated specialty additions for a truly unique sensory experience.
Appearance. Opaque deep purple to dark ruby with a dense, light violet head that shows moderate to low retention and light lacing.
Aroma. High intensity with an immediate profile of fresh blackcurrants and tart berries. The Kenya Chorongi coldbrew adds a bright, citrusy acidity and floral coffee notes rather than traditional roast. Wild fermentation traits of leather and damp earth are present. Kazbek hops offer a faint spicy and herbal lift.
Taste. Tart blackcurrant flavors dominate the initial impression, followed by bright, acidic coffee and a hint of dark chocolate. Low graininess from the malt base is present. Kazbek hops provide a light herbal bitterness. Wild fermentation adds a dry, funky complexity. The finish is crisp and very dry with a lingering blackcurrant skin astringency.
Mouthfeel. Medium-light body with a soft, creamy texture derived from wheat and oat flakes. Carbonation is moderate to high, providing a lively prickle. Very low alcohol warmth is noted. Light tannin-like astringency from the fruit skins.
