Prima Nocte (Batch 002) is a masterclass in patient fermentation, having evolved over fifty months in oak barrels to emerge as a sophisticated Oud Bruin. Built on a dark wheat base, this mahogany-hued ale radiates an inviting bouquet of toasted oak and complex funk, underscored by rich layers of dark fruit. The palate is defined by a mouthwatering acidity that highlights vibrant tart cherries and deep caramel malt, while an unexpected hint of spicy nutmeg adds unique depth. The interplay between the smooth wheat foundation and the proprietary microorganisms results in a sparkling, multifaceted experience that celebrates the elegance of time and Flemish-inspired tradition.
Appearance. Dark reddish-brown to deep mahogany (18-22 SRM); clear with good clarity from long conditioning; produces an ivory to light tan head with average retention and fine lacing.
Aroma. High intensity; rich caramel and toffee malt character with notes of toasted oak; prominent fruity esters of black cherries, raisins, and plums; a distinct funk from proprietary microorganisms and a spicy nutmeg note; hop aroma is absent.
Taste. Initial impression of mouthwatering acidity; complex malt flavors of dark caramel and toasted bread are balanced by a sharp, tart cherry character; hints of spicy nutmeg and dried fruit; bitterness is very low; finish is long, sweet-and-sour, and slightly sherry-like from extended aging.
Mouthfeel. Medium-full body with a smooth, wheat-driven texture; moderate to high carbonation providing a sparkling sensation; noticeable but well-integrated alcohol warmth; no astringency despite high acidity.
