Cerasus (Batch 001) is a vibrant Wild Specialty Beer built upon an oak foudre fermented Flanders Red base. It delivers a striking sensory experience centered around a massive secondary fermentation on 120 kilograms of sour cherries. The initial impression is defined by an acidic brightness that quickly evolves into a deep cherry presence, woven together with the rustic, leathery funk of Brettanomyces. Subtle tannins from the extended maturation in oak provide structural complexity, while the wild fermentation ensures the fruit sugars are fully attenuated. The result is a sophisticated balance of tart fruit and funky depth, concluding with a crisp, fairly dry finish.
Appearance. Pours a beautiful crimson red with an inviting pink head that shows moderate retention and fine lacing. Clarity is generally clear, though a slight haze from the fruit and wild maturation is acceptable.
Aroma. High intensity with a dominant sour cherry character. A sharp, acidic top note is balanced by complex Brettanomyces aromas of leather, earth, and light spice. Subtle toasted oak and vanilla notes from the foudre maturation linger in the background with minimal hop presence.
Taste. Initial impression is a bold, tart cherry flavor that remains the focal point throughout. The Flanders Red base provides a low malty backdrop of toasted bread. Bitterness is very low, as the balance is driven by a mild yet firm acidity. Complex fermentation characteristics include funky Brettanomyces and a touch of woody tannin. The finish is fairly dry and tart with a lingering cherry-skin aftertaste.
Mouthfeel. Medium-light body with moderate to high carbonation that provides a lively, effervescent sensation. A noticeable but well-integrated alcohol warmth is present. A slight tannin-driven astringency from the oak and fruit skins adds structure and enhances the dry perception.
