This Double IPA delivers an assertive sensory profile true to its West Coast roots. The aroma is an intense collision of resinous pine from Simcoe and the vibrant floral and grapefruit notes of Centennial. Amarillo contributes a distinct orange zest brightness, while Mosaic layers in complex hints of tropical mango and dark berries. On the palate, the hop intensity is matched by a firm, clean bitterness that remains smooth rather than harsh. A lean, neutral malt backbone provides necessary structure without adding weight, resulting in a bone-dry finish that emphasizes the hop character. The 8% ABV is seamlessly integrated, offering only a refined warmth.
Appearance. Deep gold to light copper (SRM 7–12) with brilliant clarity. Pours with a moderate-sized, persistent, off-white head that leaves decorative lacing.
Aroma. Intense hop aroma characterized by pungent pine resin, citrus peel, and subtle tropical fruit. Mosaic and Amarillo provide layers of blueberry and orange, supported by a very low, clean, grainy malt presence and a neutral fermentation profile.
Taste. Dominant hop flavors of grapefruit, pine, and resinous herbs. Moderately high to high bitterness that is clean and lacks astringency. Low, supportive malt flavor with a hint of toasted bread. The finish is dry to medium-dry with a long, lingering hoppy aftertaste.
Mouthfeel. Medium body with a smooth, slightly oily texture. Carbonation is medium-high, providing a crispness that enhances drinkability. A light, pleasant alcohol warmth is noticeable but restrained.
