TWØBAYS Mexican Cerveza is a bright and exceptionally crisp gluten-free interpretation of an International Pale Lager. Utilizing a blend of alternative grains such as millet and rice to replace traditional barley, the sensory profile is defined by a clean, grainy sweetness and a light, bready core. Delicate floral and herbal hop notes provide a subtle counterpoint to the lean malt structure. This beer emphasizes refreshment with a highly attenuated body and a snappy, dry finish. It remains true to the spirit of a traditional Mexican Cerveza, offering a transparent fermentation profile that ensures a thirst-quenching and highly sessionable experience.
Appearance. Pale straw to light gold (2–4 SRM). Brilliant clarity with a bright white head that shows moderate retention and fine lacing.
Aroma. Moderate-low intensity with a clean, grainy-sweet character. Low bready notes from alternative grains are accompanied by a subtle floral hop presence. Fermentation is very clean with no detectable esters.
Taste. Initial impression is crisp and refreshing with a light grainy-sweet malt flavor. Hop flavor is low, presenting as light herbal or spicy notes. Bitterness is low but sufficient to provide a balanced, dry finish. The aftertaste is short and clean, lacking any harshness or lingering sweetness.
