Monovocal is a vibrant, tropical-forward Gose that elevates its historical foundations with a lush bouquet of exotic fruit. The sensory profile is defined by the sharp, tangy essence of passionfruit and the floral sweetness of pink guava, grounded by a delicate minerality from sea salt. A soft, bready wheat malt backbone is further enriched by the creamy, custard-like nuances of soursop. This interplay creates a charming balance of lactic sourness and mouthwatering saltiness. It finishes exceptionally clean and dry, leaving a refreshing, lingering impression of a tropical oasis while remaining true to its refreshing, effervescent roots.
Appearance. Hazy straw to pale gold (3–4 SRM) with a moderate, tight-bubbled white head. High carbonation creates a persistent effervescence despite the presence of fruit additions.
Aroma. High intensity of tropical fruit, led by the musk of pink guava and sharp passionfruit. A clean lactic tartness is balanced by subtle bready wheat and a hint of mineral sea salt, with very low spicy coriander notes.
Taste. Initial impression is a brisk lactic sourness followed by a wave of passionfruit and soursop. The pink guava adds a floral mid-palate complexity. Low bready malt provides support, while the sea salt is noticeable but restrained, enhancing the fruit character. Bitterness is nearly non-existent, and the finish is crisp, dry, and mouthwatering.
Mouthfeel. Medium-light body with a slightly rounded, tingly sensation from the sea salt and fruit additions. High carbonation provides a refreshing, prickly mouthfeel. No significant alcohol warmth is perceived.
