Animal Face: Baboon is a vibrant collaboration between Two Tides, Messorem, and Inner Voice, crafted as a Wild Specialty Beer that pushes the boundaries of fruited fermentation. This complex ale explodes with a multifaceted fruit profile, weaving together the jammy tartness of raspberry and strawberry with the refreshing essence of watermelon. Tropical layers of pineapple and stone fruit notes of peach provide a lush mid-palate, while a subtle, creamy banana character rounds out the finish. The wild fermentation provides a clean, lactic acidity that brightens the dense fruit cocktail, resulting in a refreshing, tart, and highly aromatic experience that remains remarkably dry and drinkable despite its intensity.
Appearance. Pours a hazy, deep coral-pink to sunset-red hue (SRM 7-11) with a fine-textured but short-lived light pink head. Significant haze is present from the heavy fruit additions, and head retention is relatively low, consistent with the acidic nature of the style.
Aroma. High intensity aromatics of fresh-picked raspberry and strawberry dominate the initial impression. Secondary notes of tropical pineapple and sweet peach emerge alongside a faint, candy-like watermelon sweetness. A clean, lactic tartness provides a sharp backbone, complemented by very low earthy funk and a subtle, smoothie-like banana ester in the background.
Taste. The palate leads with a sharp, refreshing lactic sourness that immediately gives way to a complex melange of fruit. Tart raspberry and strawberry flavors are prominent, followed by the juicy character of pineapple and watermelon. Peach provides a soft fleshy fruit note in the middle, while banana adds a hint of smoothness. The finish is quite dry with no lingering sugary sweetness, leaving an aftertaste of tart red berries and tropical fruit. Hop bitterness is not perceived.
Mouthfeel. Medium-light body with moderate to high carbonation that creates a spritzy, tongue-tingling sensation. The high acidity provides a crisp, mouth-watering quality, and a very slight tannin-like astringency from the fruit skins adds structure without being harsh. No notable alcohol warmth.
