This wild fermented Tasmanian Spelt ale showcases a complex synergy of farmhouse funk and vinous elegance. Having spent eighteen months on Muscat-aux-petits-grains lees within century-old fortified wine barrels, the profile is defined by sophisticated layers of dried apricot, white grape, and floral spice. The Spelt grain provides a rustic, nutty backbone that supports the evolving Brettanomyces character of wet hay and leather. A natural, bright acidity cuts through the nuanced oak influence, leading to a bone-dry, lingering finish. The extended bottle maturation integrates these wild elements into a harmonious, sophisticated expression of terroir and collaborative craft.
Appearance. Pours a hazy, pale straw-gold with a moderate, fine-beaded white head that recedes to a thin collar. Moderate carbonation is visible through the slight opacity common in heirloom grain ales.
Aroma. High intensity and deeply complex. Initial notes of funky wet hay and barnyard Brettanomyces are quickly followed by the aromatic, floral perfume of Muscat grapes. Hints of stone fruit, aged oak, and a subtle vinous oxidation from the fortified wine barrel provide significant depth.
Taste. The palate is remarkably dry and crisp. Leading with a tart, natural acidity, the flavor profile transitions into white grape skin, apricot, and a grainy, nutty Spelt character. The fermentation on lees contributes a savory, earthy complexity. Bitterness is low, allowing the funk and fruit to dominate. The finish is long, dry, and slightly tannic from the extended wood aging.
Mouthfeel. Medium-light body with a crisp, highly attenuated texture. Carbonation is moderate to high, providing a prickly, refreshing lift. A very slight vinous astringency from the oak barrels adds structure without being harsh.

So Tom said, "I prefer dark beers." 2MT said, "Well, send me red skins." And he did! Tiny, black, Barossa Valley shiraz berries from 88-year-old vines. Co-fermented in oak with dark ale for 12 months, then matured off skins a further 12 months pre-bottling.
