Two Metre Tall Sour Pumpkin Ale

This wild Australian farmhouse take on the Autumn Seasonal Beer showcases a complex three-year blend of harvests. The sensory profile is defined by a bright, lactic acidity that carves through a rustic base of malted barley and whole pumpkins grown locally by Johnny Windsor. Expect an earthy, savory gourd character rather than traditional pie spices, accented by funky, leathery wild yeast notes and a hint of dried hay. The pumpkins contribute a subtle vegetal sweetness and a deep golden-orange hue, while the extended aging provides a vinous complexity. It finishes remarkably dry and tart, offering a refreshing, harvest-focused alternative to more conventional seasonal ales.
Appearance. 10–14 SRM. Deep amber with distinct burnished orange hues. Slightly hazy appearance due to the pumpkin solids and wild fermentation; pours with an off-white, moderately persistent head and light lacing.
Aroma. High intensity lactic tartness and farmhouse funk. The aroma is dominated by earthy, squash-like notes from the whole pumpkins and rustic, toasted malted barley. Subtle leathery esters and hay-like phenols are present, with virtually no hop aroma.
Taste. Initial impression is a sharp, clean lactic sourness. The mid-palate features a bready malt backbone that supports the savory, vegetal sweetness of the pumpkins. Very low bitterness leaves the focus on the tartness and gourd character. Fermentation is very clean but complex, with no spice flavor, finishing bone-dry with a lingering tartness and earthy aftertaste.
Mouthfeel. Medium-light body; the acidity thins the mouthfeel despite the use of pumpkins. High carbonation provides a prickly, effervescent sensation. No perceptible alcohol warmth. Very low astringency from the pumpkin skins.

A wild fermented ale of malted grains and Derwent Valley grown pumpkins. This ale is a blend of three different seasons, aged individually in oak barrels in our farmhouse brewery prior to blending in March 2023.

This, our second release from the project, blends 2016 (the 1st batch), 2017 (the weird child) and 2021 batches together. 2016 had tannin and sharpness from the skin in abundance. Time has mellowed these excesses. 2017 differed from the pioneering 2016 brew so much I was confused for many years about how this project could come together.

But persistence is everything when forging into the unknown and by 2021 I had a method, a fermentation process and an outcome produced a fabulous ‘base ale’ and, with the passage of years, the initial ‘oddities’ of both 2016 & 2017 brews had matured into incredibly textured flavour components to layer over this foundation. Blended in March 2023 and not bottled until September was the final touch to complete this intriguing puzzle. As a beverage, this will open your eyes!
